In the donkey business, they call the males jacks and the females jennys…. Says Nicholas, ”Everyday on the farm we start the day by separating the jenny from the foal around 3 am. It is necessary to separate them for a short period of time in order to get some milk. We milk later in the morning, and usually we get anywhere from 8-24 oz of milk, per donkey, per milking. We then put the foal back with the jenny for a few hours and then repeat the process again for the evening milking. Our herd has great pasture and high quality hay that we harvest from our families’ lands.”
They also use milking filters and strain the milk in eight oz sealable bottles and freeze them. Nicholas continues, “In the frozen state, the milk stays good for up to 12 months. Once thawed, it can last four days in the fridge.”
